Evaluation of the Convective Drying of Fluted Pumpkin

This paper reports the evaluation of the effects of temperature on the quality of fluted pumpkin (Telfaria occidentalis). This vegetable is available in abundance and is commonly consumed by average Nigerians. Three different drying temperatures of 50ᵒC, 60ᵒC and 70ᵒC were employed for the investigation. A convective dryer was used for the drying of the vegetable samples at the stipulated temperatures which were maintained with the aid of a thermostat. The vegetable samples after washing was cut into smaller sizes of 0.4cm-0.5cm and loaded into the drying cage of the convective dryer. The vegetable samples were dried in different compartments of the drying chamber of the convective dryer at 50ᵒC drying temperature for day 1. The experiment was repeated for drying temperatures of 60ᵒC and 70ᵒC for day 2 and day 3 respectively. The daily duration of the drying is six hours from 9:00am to 3:00pm.The dried samples were thereafter taken to Science laboratories for microbial and proximate analyses. The analyses show that the microbial load decreases as the drying temperature increases. As temperature increases, the moisture content and carbohydrate of the samples decreased while the crude fiber, ash and protein increased. The results obtained in the laboratory and from the calculated data also indicated a good agreement with those found in the literature. The highest shelf life and lowest moisture content was found in the sample dried at temperature of 70ᵒC and therefore considered to be the best drying temperature for the vegetable when using convective dryer..
